Ingredients

    Potatoes white cooked or 2 large yams cooked totaling about 4 lbs
    Onions, raw, 1 cup, chopped (more if desired)
    Celery, raw, 1 cup, diced (more if desired)
    *Hot Chili Peppers, 0.25 cup, diced or more if desired
    Granulated Sugar, 0.3 cup amount depends on whether you use white potatoes or yam.
    Raisins Mariani, 1 cup
    Butter spreadable Breakstone's 1/4 cup
    Tomato sauce Goya 10.5 oz
    *Kitchen Bouquet - Browning Sauce - 1 tsp., 1 serving

Tips

Original recipe made with white potatoes but can use Puerto Rican yams or similar. Adjust sugar, raisins accordingly. Yam is not as sweet as white potato.


Directions

Cut celery, garlic & hot pepper & saute in olive oil until soft. Add tomato sauce, Kitchen Bouquet along with the rest of the ingredients including potato/yam. Heat through. Then pour into baking pan sprayed with olive oil & bake at 350 degrees for 30 to 45 minutes & serve.
