Introduction

A breakfast meal that will keep you filled up until lunch and under 250 calories! A breakfast meal that will keep you filled up until lunch and under 250 calories!

Ingredients

    1/2 Sweet Potato (not yams!)
    1 slice of american cheese
    1 egg (large)

Directions

Heat skillet on 1 notch over med heat.

Peel and grate (on the thick side of the grater) 1/2 a sweet potato. Not yams. Yams are the orange ones, you are looking for the white ones.

Once skillet is hot, pan cook your sweet potato hash patties until nicely browned on both sides. This takes
about 3 minutes on each side. I use a non-stick skillet so there is no oil!

Once you hash patty is done, put it on a plate and top with one slice American Cheese.

Pan cook your egg how you like them. I prefer over medium or scrambled.

Once the egg are done, put them on top of the hash patty with cheese.

My favorite way to eat this is with the egg cooked over medium, then crack the yolk over the patty, eat the egg white, then eat the egg yolk smothered patty.
