    1 pound ground lean turkey breast, 93%
    4.5 oz. can green chiles, diced
    1 cup chopped onion
    2 tsp chili powder
    1/2 tsp ground cumin
    2 cloves garlic, minced
    10 oz. can diced tomatoes with green chiles
    2 cups frozen whole kernel corn
    16 oz can fat-free refried beans
    1 1/2 cup cheddar cheese, reduced fat, shredded
    1 cup fresh tomato, chopped
    1/2 cup green onions, chopped


Brown ground turkey in a sauté pan over medium heat. Once the turkey is browned and crumbled, add onion, diced tomato with green chiles, cumin, garlic, and chili powder. Mix well and cook for 5 minutes. Spread mixture over the green chiles. Layer corn over turkey mixture then spoon refried beans on top, sprinkle with cheese and bake for 30 minutes at 375ºF. Let stand for 5 minutes before serving. Serve with chopped fresh tomato and green onions.
