    1 lb Black beans
    2 Large Green peppers
    8 C Water
    2/3 C Olive oil
    1 Large onion
    4 cloves Garlic
    4 tsp salt
    1/2 tsp Black pepper
    1/4 tsp Oregano
    1 bay leaf
    2 T Sugar or sugar substitute
    1/4 tsp cumin
    2 T Vinegar
    2 T Dry White Wine
    2 T Olive Oil\
    Jasmine Brown Rice


Wash beans and soak over night with 1 diced green pepper.

Drain & rinse beans and put in large pot with water. Heat over medium heat for 45 minutes.

Heat oil in skillet. Add diced onions, green pepper, pressed garlic and cook until tender. Add 1 C of softened beans mashed. MIx well and return to pot of beans.

Add other ingredients and simmer covered for 1 hour, stirring occasionally.

When mixture is thickened, add wine & vinegar. Continue to cook covered over low heat for 1 hour. If still watery, cook uncovered until it thickens.

Add 2 T olive oil just before serving. Serve over brown Jasmine Rice.
