    Soy Protein Isolate - (Cupboard natural foods), 0.34 cup (remove)
    Milk, 2%, .25 cup (remove)
    Boars Head Black Forest Ham, 2 oz (remove)
    Red Ripe Tomatoes, 2 Italian tomato (remove)
    *Onion - Red/Purple - 1/4 Cup, 1 serving (remove)
    *broccoli slaw (broccoli, carrots, red cabbage), shredded, 1.0 cup (remove)
    *Cut leaf spinach frozen, 1 cup (remove)
    Egg, fresh, 3 large (remove)


If making this again, increase the milk; the soy protein made it drier than our 'normal' Saturday fritatta.


Saute chopped onion, ham, spinach in pan (using cooking oil spray) over medium heat.
Whisk liquid ingredients in bowl, adding raw vegetables and sauteed. Scramble briefly to combine and set bottom. Bake at 380 degrees until well set, about 20 minutes.
Cut in quarters to serve.
