1C cherry tomatoes
1C celery (chopped)
1/2 medium red onion
3 tbsn fresh cilantro
1/2 lime
3 C spinach
1 tsp cajun spice (to taste)
Salt and pepper (to taste)
Directions
Chopped veggies, add lime juice and mix. Serve on bed of spinach.
