Introduction

Ingredients

    Chicken Breast, no skin, 3 ounces
    *Egg white, 2 serving
    Summer Squash, .5 cup, sliced
    Broccoli, fresh, .5 cup, chopped
    *Snow Peas, fresh, 0.5 cup
    Spinach, fresh, 1.25 cup
    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia)
    Red Potato, 58 grams
    Olive Oil, 1 1tsp
    Garlic, 1 tsp

Directions

pre-grill the chicken cut into 0.5 inch square chunks. Chop all veggies into 0.5 inch square chunks.
Put 1 tsp olive oil into skillet and warm it up on med/low heat. add garlic sautee it for 30 seconds or until soft. Add chicken and vegetables (except the spinach and tomato). Sautee for 2 to 3 minutes or until veggies have softened. Add spinach and tomato. Sautee for another minute or two. Poor in eggs and cook until eggs are done, stirring occasionally.

serve with pesto if desired.
