A nice side dish that compliments chicken, beef or pork. A nice side dish that compliments chicken, beef or pork.
Number of Servings: 6


    8 oz. of skim milk or soya if needed
    8 oz. of reduced fat cheese, grated is fine, or cut cheese into small chunks.
    2 Tbsp. of light margarine
    1/4 cup flour
    1 cup of elbow macaroni
    1 tsp ground pepper (optional)
    1/4 cup of fine dry bread crumbs (optional)


Cook macaroni as directed on package in a 2 qt. saucepan. In a separate non-stick pan put margarine, milk and cheese. Cook over low-med. heat until cheese has started to melt. Add the flour and stir continuously until very well thickened. Feel free to add ground pepper at this point if desired. Then drain macaroni and add to the mixture of cheese. Stir well and transfer into a small non-stick baking pan. 9x9 works well. If desired you can top this with plain dry breadcrumbs or leave as is to bake in a 350 oven for 45-50 minutes or until just golden brown and bubbly.
