    Non-aerosol cooking spray
    2 1/2 pounds skinless chicken thighs
    4 cloves garlic, pressed
    1 teaspoon crushed red pepper
    1/2 teaspoon salt
    1/2 cup water


LC: Baked Hubbard squash and steamed asparagus.
Regualr: Add steamed red skinned potatoes.
Kosher: No changes necessary.
Gluten Free: No changes necessary.


Coat a large skillet with a tight-fitting lid with cooking spray over medium-high heat. Brown chicken thighs on both
sides (you’re not cooking them through). Add the garlic, crushed red pepper flakes and salt. Heat the seasonings
briefly then add the water. Cover the skillet and simmer the chicken for 45 minutes, adding more water as necessary
to keep it from burning. The water should evaporate to a glaze-like consistency.
