    Slow Cooker Cabbage Soup

    3 1/2 cups water
    2 cups cabbage, coarsely chopped
    1 cup sliced carrot
    1/2 cup celery, sliced
    1/2 cup onion, chopped
    1/2 tsp dried dill
    1/2 tsp dried oregano
    1/2 tsp dried basil
    1/2 tsp pepper
    3-10.5 oz. cans vegetable broth (fat-free, low sodium)
    2-14.5 oz. cans diced tomatoes, no-salt added
    1/2 cup brown rice


Combine all ingredients in a slow cooker. Cover; cook on low-heat for 8 hours. Increase heat setting to high; stir in rice. Cover and cook an additional 60 minutes or until rice is tender.
