Ingredients

    1 Boneless, Skinless cooked chicken breast, chopped or shredded
    1/2 cup chopped apple
    1/2 cup cranberries roughly chopped
    3 tablespoons low-fat yogurt
    1 tablespoon Fat-free mayo
    1/2 teaspoon curry powder.

Directions

Roughly chop apple and cranberry. Chop or shred chicken breast. Combine all ingredients.

    I made this last night and had it for lunch and dinner today after letting it sit overnight. Absolutely delicious-I will make this again and again. Used dried cherries, baked turkey breast, and 1.5 T smart start mayo due to what I had on hand. - 10/7/08

    I made this today for lunch and it was excellent. I substituted 1/4 cup craisins for cranberries as I had no cranberries on hand. I also used fat free greek yogurt for extra zing. - 10/6/08

    My fiance and I both really enjoyed this recipe. In fact he was a little freaked out about the fruit and chicken together and mumbled something about health food and me trying to kill him...lol! But he ended up loving it and eating most of it!!! This was great. - 10/7/08
