Ingredients

1 TB Emes Gelatin or other vegan gelatin
1/2 Cup hot water
2 graham cracker crusts
1 box Mori Nu Extra Firm Tofu
1/2 - 3/4 Cup sugar
1 Cup (1/2 container) IMO alternative sour cream
3 tablespoons 100% lemon juice
1tsp vanilla
1 pinch salt
1tablespoon soy milk
Tips
If you cover the pies they may not set up as well. Save the lid from the crust as a lid for the next day. You can put it on after you add your fruit topping.
Directions
Mix together 1 TB gelatin with 1/2 cup hot water and let sit five minutes.
In a blender add gelatin/water mixture with one box extra firm Mori Nu tofu. Blend until fluffy.
Add sugar,IMO,Lemon Juice,vanilla, salt, and soy milk.
Blend until smooth then pour into two graham cracker crusts. Bake for twenty minutes @ 350.
Let stand uncovered in refrigerator over night.
Top with fruit or pie filling of your choice!
