    3 med to large onions, sliced
    2 TBS olive oil
    4 garlic cloves, minced
    1 large can tomatoes
    2 cans kidney beans, drained and rinsed
    1 can romano beans drained and rinsed
    2 packages or bunches of fresh spinach
    (8-10 oz each)washed well and chopped in half or so.


Saute onions and garlic in the olive oil about 10 minutes. Add tomatoes with juice, and drained, rinsed beans. Simmer on low about 30 minutes to marry the flavors. You can turn this off and just let it set until serving time. 5 minutes before serving, bring to a boil, and add the chopped spinach. Good served with rice or potatoes.
