1 pound boneless skinless chicken breast meat, cut into
2 teaspoons Cajun seasoning
1/2 tablespoon olive oil
1/2 tablespoon butter
2 large green bell peppers, seeded,
deribbed and cut into strips
1/2 cup sliced onion
2 cloves garlic, pressed
Salt and pepper, to taste
LC: Serve over Cauli-Rice (process cauliflower in a blender or food processor until it resembles grains of rice; steam “rice” till tender; drain; salt and pepper to taste and fluff with a fork.
Regular: Serve over brown rice instead of Cauli-Rice.
Kosher: Use additional olive oil instead of butter.
Gluten Free: No changes necessary.
