Introduction
I had a broccoli, cauliflower, sunflower seed, red onion salad w/a sweet dressing at my in-laws at a pot luck and pretty much only ate that. I had to come home and find a recipe. I left out Dewayne7's raisins, too. This really hits the spot!! Ingredients
-
-3 C chopped fresh broccoli
-3 C chopped fresh cauliflower
-1/2 C chopped red/purple onion
-1/2 C shelled sunflower seeds (salted or unsalted)
-4 T Hormel real bacon bits, normally I would use the reduced fat
-1/2 C, 8 T or about 120g of Hellmanns or Kraft mayonnaise made with Olive Oil
-1 T Balsamic vinegar
-2 packets of no calorie sweetener like Splenda
Directions
---Mix your broccoli, cauliflower, onions, bacon bits and sunflower seeds in a large bowl and set aside. In another small bowl, whisk your mayo, vinegar and splenda or other sweetener together and then pour over your veggie mix. Stir until all is coated well. Chill and serve when ready.
---Makes about 6 cups or 12 servings of 1/2 C each.
