    Black beans, 2 cans (3 to 4 cups cooked)
    Yellow Sweet Corn, Frozen, 1 cup kernels
    Petite Cut Diced Tomatoes, 2 cups (1 large can)
    Minced garlic, 1 clove
    Taco Seasoning, 1 Tbsp


This is great with cilantro, too... You can add salt but watch the sodium. I prefer to toss some raw onions into the mix as well after it is done cooking.


Drain and rinse the black beans. Combine with remaining ingredients in a saucepan and heat over medium until hot, stirring occasionally. Reduce heat, simmer about 10 minutes to marry the flavors.

Serving Size: makes 6 1-cup servings
