This is a side dish that is an interpretation of a california roll in salad form. YUM!!! This is a side dish that is an interpretation of a california roll in salad form. YUM!!!
Number of Servings: 8


    2 cups sushi rice (brown or white) - prepare according to package directions
    3 Tbsp rice vinegar
    1 large cucumber - seeded and diced
    2 avocados - diced
    1 package dyna-sea imitation crab meat - cut in small pieces
    3 packets splenda or truvia


This can be made a day ahead and keeps very well in the refrigerator. Wait to add avocado until right before serving to avoid it turning brown.


Prepare rice according to directions on package (rinse, cook, don't open pot, etc.)
Transfer rice to non-metallic bowl and add truvia/splenda and rice vinegar. Then add in diced cucumber and imitation crab meat. I wait to cut the avocado until immediately before serving because it will then be nice and green.
