    1 whole egg, beaten
    1/2 cup cremini mushrooms, diced small
    1 clove garlic, minced
    1/2 tin of smoked oysters in oil, chopped
    1 tbsp light feta cheese
    dash of pepper


Serve with a side salad.


In a small bowl whisk the egg and a dash of pepper; set aside.
In a small pan on medium-hot, cook the mushrooms and garlic until the mushrooms are mostly cooked (3-5 min). Add the chopped oysters and cook until heated through (another 2-3 min).
Add the beaten egg and cook, stirring with a spatula to cover the mushrooms & oysters, until cooked through (another 2-3 min).
Turn off the burner. Sprinkle 1 tbsp of feta on top of the scramble, and put a lid on. Let sit for about 5 min until the cheese starts to get soft and melty (it won't melt completely).

Serving Size: Makes one scramble
