    3 cloves garlic, minced
    1 cup celery, diced
    2 pounds potatoes, diced
    4 cups vegetable broth
    black pepper to taste
    1 12ounce can nonfat evaporated milk
    1 cup low fat shredded extra sharp cheddar cheese


Mince the garlic, dice the celery and potatoes. Add these to a crock pot and pour the 4 cups of vegetable broth over. Add black pepper to taste. Cook in slow cooker for 6-8 hours. With a stick blender puree the potatoes not mashing them all. Add the evaporated milk and cheese. Serve hot. Season as needed with black pepper.
