A creamy cheesy potato dish great for dinner parties. A creamy cheesy potato dish great for dinner parties.
Number of Servings: 8


    3 cups white potatoes, diced
    1 cup Plain yogurt
    1 Tbsp Vegetable Spread
    2 cups Cheddar, 1 cup Colby Cheese (You can reverse these if you don't like sharp cheese taste.)
    1 Tbsp dry yellow Mustard
    Salt and Pepper to taste


I would caution that this is not a low fat meal. But it can be made so if you use low fat yogurt and cheeses. You can even substitute turnips for the potatoes but they take longer to cook.


Cover potatoes with enough water to leave a 1/2 inch over them. Boil the diced potatoes until semi-firm. Drain water and put back into warm pan.

Add Yogurt and Veggetable spread. Then add cheese and mustard. Mix until the whole dish is coated.

If you like your potatoes crunchy you can spread this into a baking dish and bake at 375 for 15 minutes till browned.

Serving Size: makes 6 1/4 cup servings
