Ingredients

    2 medium red onions, finely diced
    2 garlic cloves
    4 rashers lean bacon, chopped
    500g lean beef mince
    2 carrots, finely diced
    2 stalks celery, finely diced
    100g mushrooms, chopped
    2 tbsp tomato paste
    2 400g cans tomatoes
    2 tbsp dried oregano

    Basil and parmesan to serve.

Directions

Gently saute bacon, onion and garlic until onion is soft. Add mince and brown well. Add tomato paste and cook for one minute

Add carrot, celery and mushroom, and cook for one minute. Add tomatoes and additional water if needed to loosen the mixture.

Cook for at least an hour until mince is tender. Serve with pasta, basil and grated Parmesan.
