Number of Servings: 4


    4 cups(packed) grated sweet potatoes or yams (1 large or 2 medium)
    1/2 cup grated onion
    3-4 tbsp Lemon juice
    1 tsp salt (could easily be reduced)
    black pepper to taste
    4 beaten eggs (yolks optional)
    1/3 cup flour

    optional: 1/4 cup minced parsley
    oil for frying

    Toppings: sour cream, yogurt or apple sauce


Combine all ingredients and mix well.

Option one: heat small amount of oil in heavy skillet (must be very hot) - scoop batter into pan to form thin pancakes, patting the batter down, fry on both sides until brown, adding extra oil if needed
(I don't have much success this way - I end up with a mush pile - a tasty mush pile but still a mush pile)

Option Two (baked) - Heat oven to 375 degrees Celcius - pour batter into a greased casserole dish (the larger the surface area the shorter the bake time), bake between 35-45 minutes, until center is set and the top is a little crusty.

Serve with suggested toppings - very good anytime of the day in my option. Enjoy.
