Ingredients

    1 lb fillet of fresh salmon
    3 Tbs brown sugar
    1 Tbs grated orange peel
    cracked black pepper

Directions

Combine brown sugar, orange peel and black pepper together in a small bowl.

Spray the bottom of a shallow baking dish with olive oil spray and place the fish in, skin side down. Spread brown sugar on top of fish, cover with foil and place in the fridge for 2 hours (or longer).

Bake at 350 for approximately 25 minutes or until a meat thermometer reads 125* in the thickest part.
