Ingredients

    1 box macaroni/rotini (1lb)
    16 oz of ricotta cheese
    1 jar of tomato sauce
    1 14.5 can of diced tomatoes
    1 oz frozen chopped spinach (half a box), thawed and drained
    4 scallions, all parts sliced
    1/2 cup part skim mozzarella

Directions

Cook past to just before al dente according to package directions. Meanwhile, mix in a 9x13 glass baking dish the ricotta, tomato sauce, canned tomatoes, spinach, and scallions. Once pasta is done cooking, stir the pasta with the sauce mixture until all noodles are well coated. Bake in a 350 degree oven for 20-30 minutes, covered. Uncover, then sprinkle cheese on top. Cook for an additional 10 minutes, until cheese is a light golden brown. Let sit for no more than 5 minutes, then eat!
