    Egg beaters, mushrooms, and scallions


instead of the tins, you can use ham for the cups. Or bread.

add sausage or ham in the mix for extra protein

add any veggies you want =)


preheat oven to 400 degrees F

mix all ingredients together in a bowl

put tins in each of muffin cups in the pan. fill each of the muffin tins about halfway with the egg mix. put in the over for 13-17 minutes- until you can stick a toothpick in the egg and it comes out clean.
