Ingredients

1 head cauliflower, cut up
1/2 to 3/4 cup olive oil
2 large eggs
3 cups shredded mozzarella cheese (12 oz)
Meat toppings (I used 8 oz. fat free ham)
Pizza sauce or spaghetti sauce (I used 1 cup spag sauce)
Veggie toppings (I used 1 red pepper, 1 can pineapple tidbits, 1 cup fresh spinach)
Basil
Oregano
Pepper
1/4 cup grated Parmesan cheese
Tips
This is not a "hand-held" pizza. You will need a knife and fork.
Directions
Cook cauliflower until soft. Drain cauliflower and transfer to large bowl. Mash until consistency of mashed potatoes with few chunks. Add 1/4 cup of the oil, the eggs, and 1 cup of the mozza cheese. Mix well.
Preheat oven to 350. Lightly coat pizza pan with about 1 tbsp olive oil. Pour the cauliflower mixture into the pan and press into a flat, pizza-like shape no more than 1/2" thick, mounding it up higher at the edges. Bake for 20 min.
Remove pizza crust from oven and spread it with pizza sauce, the remaining 2 cups mozzarella, your choice of toppings, and spices. Drizzle with remaining olive oil (optional), and sprinkle with Parmesan. Bake until mozza melts, 10-15 min.
Cut into 8 pieces and transfer onto plates.
