Ingredients

    1 cup (200g) granulated sugar
    1 cup (250ml) extra virgin olive oil
    1 cup (250ml) orange juice, preferably freshly squeezed
    zest of one orange
    1 cup (150g) raisins
    3.5 cups (450g) self-raising flour or plain flour sifted with 3 tsp baking powder


Directions

Preheat oven to 180 C (350 F).
Measure sugar, oil and orange juice into a bowl. Stir until sugar dissolves. Add orange zest and raisins. Quickly stir in flour--don't over-mix.
Bake c45-50'.
