    2 medium Cucumbers, peeled and thinly chopped
    16 oz plain Yogurt, low fat
    1 TBSP Salt
    1/2 TBSP Vinegar
    3 cloves Garlic, minced
    1.5 oz Walnuts, ground or finely chopped
    .5 oz Olive Oil
    1 TBSP Parsley (to garnish)


1) Wash and peel cucumbers. Chop thinly and put into a mixing bowl, then sprinkle with Salt.
2) Put Yogurt and garlic into mixing bowl. Mix well. Optionally add oil and/or Walnuts.
3) Place mixture in deep serving bowl and garnish with Parsley.
4) Refrigerate and serve cold.

Serving Size: Makes 8 servings
