Creamy shrimp over pasta Creamy shrimp over pasta

    8 oz linguine-I use Barilla Whole Grain
    1 tbsp olive oil
    1/2 cup finely chopped onions
    5 cloves garlic, minced
    3 tbsp dry white wine
    1 tbsp cornstarch
    1 cup evaporated skim milk
    1/2 tsp ground coriander
    16 oz large shrimp, peeled and deveined
    3 tbsp snipped fresh parsley
    1/2 tsp salt
    1/8 tsp black pepper


Cook the pasta according the directions on the package. Drain and set aside. Cover to keep warm
Spray skillet with no stick spray. Add the oil and heat over medium high heat. Add onions and garlic. Cook and stir 5 min or until the onions are golden brown. In small bowl stir the wine and cornstarch until smooth. add wine mixture to milk. stir into the onion. Simmer over medium heat, stirring constantly. Reduce the heat. Stir in the coriander and cook for 1 minute. Add shrimp. Return to a simmer. Simmer uncovered for 3-5 minutes or until the shrimp is pink. Stir in the parsley, salt and pepper. Serve on top of the hot pasta.

Serving Size: 4 servings- 2oz pasta, 1/2 cup shrimp and sauce
