    1 cup chopped onions
    1/4 cup chopped celery
    1 slice thick bacon
    1 clove garlic
    4 cups water
    1 14oz can stewed tomatoes, chopped
    1 14oz can chick peas
    1/2 cup chopped carrots
    2 tbsp minced parsley
    1/2 tsp basil
    1/2 tsp oregano
    1/2 cup uncooked pasta


I use good apple smoked bacon in this. It adds wonderful flavor with little added calories.


Spray an unheated medium saucepan with no stick spray. Add the onions, celery, bacon and garlic. Cook and stir over medium heat until the onions and celery are tender. Add water, tomatoes, chick peas, cabbage carrots, parsley, basil and oregano. Bring to a boil, then reduce the heat. Cover and simmer 20- 30 minutes. Add pasta, return to a boil, reduce the heat. Cover and simmer additional 10 minutes or until the pasta is tender but firm.

Serving Size: 5 (1) cup servings
