Ingredients

    1 1/3 cups whole wheat flour
    1/2 cup sugar
    2 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    1 1/3 cups 1% milk
    1 cup Kellogg's All-Bran Buds cereal
    3/4 cup regular rolled oats
    1 egg, slightly beaten
    1 medium banana, mashed (1/3 cup)
    1/3 cup crunchy almond butter
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1 cup dark chocolate morsels

Directions

In a medium bowl stir together flour, sugar, baking powder, baking soda and salt, set aside.
In a large bowl combine milk, cereal and oats, let stand 2 minutes. Add egg, banana, almond butter, cinnamon and nutmeg. Beat well. Add flour mixture and chocolate morsels, stirring until just combined. Portion evenly into 24 cup muffin pan (2), coated with cooking spray or line with muffin baking cups.
Bake at 375 degrees for 16-18 minutes. Let stand 5 minutes. Transfer to a wire rack.

  • These are really good - and make a nice snack or change from eating bowl of bran cereal! I am going to try lessen the sugar next time...the cereal, chocolate and banana are already so sweet. - 6/16/12
