    1 lb. ground turkey breast
    2 cups cannellini beans (cooked)
    3 cups crushed tomatoes
    3 cups sliced mushrooms
    4 cups diced zucchini
    4 slices pepperoni, diced
    2 cloves garlic
    3-4 sprigs thyme
    Salt, pepper, and red pepper flakes to taste


Note: I'm not sure why the sodium is showing up as high as it is. It may vary by brand of canned tomatoes/beans.


After lightly seasoning with salt and pepper, brown the ground turkey and set aside.

In a large saucepan, gently saute the garlic until fragrant, then add the diced pepperoni and saute for a minute or two longer. Add the mushrooms and cook until they have released their juices. Add the diced zucchini and cook over medium heat until it has softened slightly (5-10 minutes). Add the crushed tomatoes, ground turkey, herbs and seasonings and cook covered over low heat for a half hour. Taste and re-season as needed.
