Number of Servings: 6


    3-4 lb Butternut Squash- peeled, seeded and cut into 1" cubes
    2 tbsp Olive oil
    1/3 cup grated Parmesan cheese
    3 cloves of Garlic, minced


Peel, seed and cube your squash. In a large bowl combine oil, garlic and cheese. Add squash and toss to coat. Place in a 2 quart casserole dish and roast at 400 deg for 30-40 minutes or until done.
