    2 x 185g tins tuna in spring water, drained & flaked
    1 x 4oog tin cooked cannellini beans, drained & rinsed
    1 cos lettuce, shredded
    12 cherry tomatoes, halved
    2 spring onions, thinly sliced
    1/4 cup picked flat leaf parsley
    2 Lebanese cucumbers, cut into long shards
    1 avocado, sliced into wedges
    2 eggs, hardboiled & quartered
    100g black olives

    2 tsp Dijon mustard
    1 clove garlic, crushed
    2 Tbl lemon juuice
    4 Tbl olive oil
    Sea salt & freshly ground black pepper


Whisk the dressing ingredients in a large bowl and season.

Put the tuna, beans, lettuce, tomatoes, spring onions and parsley in the bowl with the dressing and toss gently.

Arrange the cucumber and avocado in shallow bowls and top with thes salad then the eggs and olives.
