Quick and delicious black bean burgers! Quick and delicious black bean burgers!
Number of Servings: 5

1 can black beans, rinsed and drained, divided in half
2 slices of whole wheat bread, processed into crumbs
    1 egg
    1 egg white
1 tbsp olive oil (+ 1/2 tbsp for frying pan)
    2 garlic cloves, minced
1 tsp (or more, your taste) chili powder
1/2 tsp (or more, your taste) cumin
    1/2 tsp salt
    Zest of half a lime

We served ours on whole wheat kaiser buns, with cheddar, lettuce, red onion, and mushrooms. Would be delicious with guacamole!

Tear bread into smaller pieces and process in food processor until crumbs (you need about 1.5 cups of bread crumbs). Place into medium sized mixing bowl.

Now, add 1/2 can of beans, olive oil, egg & egg white, minced garlic, spices, and lime zest to food processor. Blend (will be quite liquidy).

Add to breadcrumbs, and add second half-can of beans. Mix together.

Form into patties, and place into skillet on medium heat. Cook on each side for about 3 minutes.

Serving Size: Makes approximately 5 patties (made to fit Kaiser buns)

Number of Servings: 5
