Introduction

Ingredients

    1 lb Chicken (boneless,skinless)
    1 6oz container of Greek Yogurt, nonfat plain (The Greek Gods)
    1/4 cup Olive Oil
    3 medium garlic cloves
    1 Lemon (for its juice)
    2 tsp Bengel Masala (please read tips)
    1/2 Large sweet onion
    1 large Bell Pepper
    ***bamboo skewers

Tips

Bengel Masala is a brand of blended spices i found at New Seasons. You can use any middle eastern spices that you like.


Directions

Take your Greek yogurt, olive oil, juice from a whole lemon, pressed garlic and spices and mix in a bowl to create your marinade. Next pour mixture into a large ziplock bag and set to the side. Chop your chicken up into bite size chunks and toss into marinade, place in fridge for anywhere from 2-6 hours.

Place your bamboo skewers in enough water to cover them and allow them to soak before threading meats and veggies on to them, this will prevent burning.
Cut up onion and bell pepper into bite size chunks, start threading veggies and chicken along skewer.
Grill until chicken is cooked thoroughly basting with marinade several times or you can bake in an oven at 375 degrees for 30-35 minutes.

    Since I had no lemons and Bengal masala, I used a lime and garam masala. I used the marinade to make fajitas afterwards. The chicken was delicious!!!! Thank you very much! - 1/14/15
