    1 Tbsp Canola Oil
    1 X-Large Egg
    1 Cup Egg Beaters Egg Whites
    3 oz Jenny O Turkey Sausage
    3 Tbsp Diced Onion
    4 Medium Mushrooms
    3 oz Mozzarella Part skim


Add seasonings to taste


1) Bring 1 tsp oil to heat in 9" non-stick omelet pan
2) Add 1 oz sausage, 1 Tbsp onion diced and Mushroom and saute. Make sure to break up sausage and cook thoroughly.
3) in a small mixing bowl add egg and eggbeaters and mix well
4) add 1/3 eggs to Skillet and let cook 20 seconds. Slide a heat resistant rubber spatula under the cooked eggs and lift, tilt pan slightly and allow runny eggs to flow under cooked egg. Repeat going around the pan until most all runny eggs are gone. Then turn or flip omelet and cook 20-30 seconds.
Add 1/2 oz of Cheese then fold out onto plate. Top with 1/2 oz cheese and microwave for 20-30 seconds.

Repeat steps 1-4 2 more times for remaining omelets
