    1 lb. red potatoes
    3 hard boiled eggs
    1/3 cup Olive oil mayo
    1 tbsp. capers
    1/2 cup frozen peas, heated
    1 med chopped onion
    1 tsp. mustard
    salt and pepper to taste


If not moist enough either add more mayo, or Greek style plain yogurt.


Boil the red potatoes, hard boil the eggs. Heat up the frozen peas in microwave. After everything cools, chop the potatoes in bite size pieces. add the sliced eggs, mix in the mayo and chopped onion, mustard, capers and season to taste.
