Turkey sausage, potatoes, eggs and cheese.. super easy and light on calories. Turkey sausage, potatoes, eggs and cheese.. super easy and light on calories.

    2 small russet potatoes
    2 precooked turkey sausage patties (I use the wal-mart brand)
    1/4 cup of reduced fat mexican cheese blend
    3 slices of sargento reduced fat pepper jack cheese
    6 tbsp of fat free croutons (I use the small rothberry farm ones)
    3 large eggs. (you could use egg beaters as well)
    Splash of milk (about 2 tbsp)
    The following seasonings to taste:
    sea salt
    granulated garlic
    2 tbsp of oil (I use an olive oil/canola blend)


I cooked the sausage patties on medium for about 6-7 minutes on both sides. (Use a non-stick so that you don't have to use any oil for this step.) Make sure to blot off the oil from the top of the sausage before flipping it to get rid of as much fat as possible.

While your sausage is browning, peel 2 small russet potatoes. Dice into small pieces (About 1/4" cubes) and set to the side until your sausage is done. (Feel free to blot off some of the water/starch with a papertowel.)

Remove the sausage from the skillet when finished and put it on your cutting board. Add your oil to your hot skillet, add your diced potato pieces. Let it cook for a minute or two, then add your spices. I add about a tsp of paprika and about as much black pepper (I like things spicy) I just add a pinch of salt and garlic powder.

While your potatoes are browning, beat your 3 eggs in a bowl. Add a little salt and pepper to your eggs.. I also add a splash of milk to loosen the eggs up a little.

Preheat your oven to 375 and spray an 8" round cake pan with nonstick spray.
Dice up your sausage patties to about the same size as you cut your potatoes.

Once your potatoes are about done, add your sausage pieces and brown them together until your potatoes are crisp and cooked through. Pour the potatoes and sausage onto a plate with papertowels to remove as much excess oil as possible.

Add your potatoes and sausage to your pan. Sprinkle your mexican blend cheese over it, add your croutons over the top. Pour your egg mixture over everything and make sure everything gets kind of coated. You may need to use a spoon to dunk the croutons to begin with. Let it soak for about 5 minutes.

Tear up the pepperjack cheese while you're letting the egg mixture soak into the bread cubes and spread around the top of the mixture.

Pop into the oven and cook for about 20-25 minutes until it's completely firm.

Serving Size: Makes 8 (pie wedge size) pieces.
