    8 oz. feta cheese, crumbled
    2 cups egg substitute
    1 cup chopped red bell pepper
    1 cup chopped onion
    1 large tomato chopped
    1 T olive oil
    basil, salt, pepper to taste
    1 T Pecorino or Parmesan Cheese grated


Saute chopped pepper and onion in olive oil till onion is translucent.

In a bowl mix together egg substitute, feta cheese, chopped tomato, and seasonings. Add the sauted vegetables to the bowl and mix thoroughly. Pour into an 8" x 8" pan; sprinkle with the parmesan or pecorino cheese, and bake for about 20 minutes at 350 degrees till set.

Allow to cool 15 minutes then cut into 8 pieces.
