Ingredients

    I used frozen cod filets they are pre packaged at 4.5 oz each
    I measured out 2 cups of fresh baby spinach leaves, raw and rinsed.
    I quartered one medium Spanish onion
    1/2 cup water
    juice of one lemon
    3 basil leaves chopped


Directions

In large saute pan start 1/2 cup water to boil, add onion cook until starting to turn translucent, add spinach leaves place lid on top for about 3-5 minutes. When spinach begins to wilt push to one side of pan then add the two cod fish filets. Place lid back on pan simmer for about 3-5 minutes on each side. If pan looks like it is getting dry add about a 1/4 cup more water. When fish begins to flake add chopped basil then baste the filets with some of the broth. Fish is done when it is easily flaked but not broken apart. When done plate fish and then divide the spinach and onions to plate then drizzle half of the fresh lemon juice over both fish and spinach. Zest lemon if desired over spinach and fish.
