Introduction

A great side dish that complements any entree. A great side dish that complements any entree.

Ingredients

    1 medium head cabbage, chopped
    3 medium zucchini (about 3 cups), sliced
    3 tbsp onion powder
    1 tbsp garlic powder
    1 tbsp salt
    1 tsp ground black pepper

Directions

Heat the skillet over a medium flame.
Add about half the cabbage and zucchini and season with half of the seasonings, stir.
Add the remaining cabbage, zucchini and seasonings, stirring really well.
Cover and simmer on a low flame until the cabbage is soft (about 30 - 60 minutes).
The vegetables need no oil or water as they will naturally release a lot of moisture. Also, the cabbage will reduce by half as it softens. You can omit the garlic and onion powder, salt and pepper and season any way you like.

    I carmelized fresh onoin in a little olive oil and added everything to a crock pot with small diced carotts.Put leftovers in individual dishes and baked a little swiss cheese and parm. broiled till melted.No Cheese police please,just use a little,don't forget the pepper..Chef Jim - 8/3/08

    I made this tonight but i didn't use the powders or salt & pepper. I used salt free Mrs. Dash, added yellow and red bell pepper, fresh onion and fresh garlic. I can't have all that sodium. It was a big hit. I will definitely make this again. - 9/18/08

    This is Favorite cabbage recipe, with or w/out zucchini, but I use fresh garlic & a little cayenne. I also do add butter for flavor & since you need some fat to absorb nutrients & it works out ok since I usually end up eating this by itself, since it's so good I have to stop from eating it All @once - 11/9/08

    I cut the cabbage into wedges and sliced the length of the zucchini and grilled them on my George Foreman grill, then sprinkled with lime juice and coarse sea salt when I served it. It was fantastic! - 9/4/08

    I make a similar dish with the cabbage, fresh or canned tomatoes, a lot of fresh onion, salt and I add garbanzo beans. I am going to try it with the added zucchini. It sounds delicious and a great way to eat vegetables. - 11/4/08

    I have been making something similar for years, grated carrots, onions, garlic and diced chicken breast cooked until tender and adding the cabbage at the end of the cooking. I add cumin and pepper to taste...not salt. I know zucchini would be good too. - 8/3/08

    I liked this with the following changes--nonfat cooking spray then real onion, real garlic, little bit of real red pepper to give it more crunch and flavor. add zucchini last. Yummy! - 8/3/08

    I can't help but think that the 1 Tbsp of salt is a misprint and should be 1 tsp. My two cents on the salt issue.

    I am definitely going to try this with fresh garlic & onion. And some mushrooms!

    This was good I added Baby Bell mushroom Sliced and added the Zucchini later so as not to get soggy. We Love cumin so I added that and real onion.
    This week I made this and added vegetarian sausage and it was GREAT

    Hello, I am new to using the comments sections, so why not just add a section for pals to add their changes. Too many notes on adding the same things. Not negative, just think it coul be simpler. All recipes are meant to be changed some per taste or allergies. Thanks for the ideas - 7/5/10

    we love fried cabbage I will be making this one soon. Its good to know I don't need the oil for it to work but I agree with the person who said a little bit of butter for flavor would be nice a pat of butter isn't bad. but so tasty. - 5/6/10

    I love cabbage and zucchini and I raise both in my garden. Since I am on a no salt diet, I use flavored olive oil and liquid amino for seasoning. I have tried this yet but will tonite thanks for the idea - 5/18/09

    I love zuccini. I like the idea of putting in into a salad with cabbage. But rather than onion powder, I would rather use a red onion sliced up to give it added color and flavour. - 5/6/09

    I made the recipe pretty much as described but it wasn't getting cooked fast enough so I added some low sodium beef granules and about 1/2 cup of water. I turned up the heat and it was finished cooking in about 5 more minutes. My family loved it! Especially the seasonings that were in it. - 3/17/14

    I had a guest on the medifast program so I switch zucchini for diced white mushrooms. I used a .25 c of yellow squash too because I was worried about the moisture. I also addd red pepper flakes.     This is now one of my favorite Favorites! When I make it I add caraway seeds to remind me of sauerkraut (which I love) and I frequently reheat leftover portions with turkey sausage to make a great meal. This recipe is very tasty; plus you can eat a lot with few calories & low sodium. - 5/14/10

    I like the idea of cooking cabbage and zucchini together, not having done it before. However, the recipe itself is way too bland and nothing to it. Love Chef Jim's and a few others' r recipes to try versus this particular one and surely fresh is always better. - 5/6/10
