    1 tsp coconut oil
    1/2 cup chopped onion
    1 clove garlic
    1/2 cup dried lentils
    1 1/4 cup chicken broth (made from boullion)
    1/2 Tbls chili powder
    1 tsp cumin
    1/2 tsp dried oregano
    salt and ground black pepper to taste
    1/2 cup black beans
    1/2 cup canned corn
    1/2 cup salsa
    1/2 cup shredded cheddar
    tortilla chips (not included in calorie total)


Heat oil, saute onion and garlic. Add chicken broth, lentils, and seasoning, and simmer for 1/2 hour or until lentils are soft. Add black beans and corn. Spread mixture over chips, add salsa and shredder cheddar. Serve warm.
