Introduction

This is a great dish if you have left over chicken breast or even a rotisserie chicken This is a great dish if you have left over chicken breast or even a rotisserie chicken
Number of Servings: 4

Ingredients

    Approx 1 1/2 cups of cooked Shredded chicken breast
    2 tbs of Light Mayo
    2 tbs of Light French Dressing
    Approx 8 grapes halved ( either red or green seedless)
    Salt and Pepper to taste
    Romaine Lettuce cut or torn
    Dash of Onion powder


Directions


In a bowl mix together your chicken breast, mayo and french salad dressing. Add the salt , pepper and onion powder. Then add in your grapes. Mix all together and chill for about 20 minutes.

Combine chicken with mayo - like you were making chicken salad
Add in 2 tbs of French Dressing
Cut either Green or Red seedless grapes in half and mix it into your chicken salad

Chill the chicken salad for about 1/2 hour. Serve on lettuce leaves or on a low calorie bread.
Place scoop of chicken salad on the julienne romaine lettuce. You can also add some slivered almonds but remember this adds more calories to you dish
Mix it with salt, pepper to taste

Serving Size: 4 scoop size serving ( ice cream scoop)
