A delicious creamy, comforting lentil soup with a little kick - it's like a hug in a bowl! A delicious creamy, comforting lentil soup with a little kick - it's like a hug in a bowl!
Number of Servings: 4


    1/4 cup butter
    2 tsp black mustard seeds (or yellow if you can't find black)
    1 medium onion, chopped finely
    1 tbsp grated ginger root
    1 tsp ground tumeric
    2 green chillies, de-seeded and chopped finely
    1 cup red lentils
    4 cups water
    1 1/4 cups reduced fat coconut milk
    1 tsp salt


It's lovely to eat straightaway but I think it's even nicer if you re-heat it later


Melt the butter in a large saucepan, add the mustratd seeds and put a lid on it.

Once the seeds have started to pop, add the onion, garlic and ginger, cook uncovered until they're soft (about 10 minutes)

Add the tumeric and chillies, stir and cook for another couple of minutes

Add the lentils and cook for about 2 minutes until they've started to become transluscent

Add the water, coconut milk and salt. Give everything a good stir and simmer for around 40 minutes until it's nice and thick - you will need to stir from time to time to stop it sticking to the bottom
