    I said 3 cups of Spaghetti Squash = but that is what I am estimating I got out of the Medium Sized Squash I bought.

    Half Yellow Onion, chopped

    2 Cloves Garlic, chopped

    2 Tomatoes, chopped

    - any other vegetables you like!

    Spices : Ginger, Red Pepper, Salt, Pepper, Rosemary


Cut the squash length wise, spoon clean.
Preheated over (I have convection) to 350. Cut sides down, roast in over for about 30 min. I sprinkled a little cinnamon on the squash before to have a little sweet.

Sautee the vegetables.

Squash is ready when a knife can puncture the outside without much force.

Once cool enough to handle, with a big spoon, scoop out the squash and add to vegetables.
