    5 or 6 small red potatoes, quartered
    6 oz Greek yogurt
    Fresh dill
    Juice of 1 lemon
    1 small shallot, thinly sliced
    3 oz. smoked salmon
    1 C baby spinach or arugula


Place the potatoes in a large pot covered by 1-inch of water. Bring to a boil, then salt the water and cook until tender, about 10 minutes. Drain and let cool slightly.

While the potatoes boil, make the dressing. In a bowl, combine the Greek yogurt with lemon juice and add 1 T chopped dill. Season with salt and pepper. Add water or milk to thin the consistency until it can be poured but isn't too thin.

To assemble, place the potatoes, spinach and smoked salmon in a low bowl. Sprinkle with thinly sliced shallots and drizzle with dressing.
