Ingredients

    1 cup flour
    60 grams (about 1/2 cup) protein powder
    1 teaspoon baking powder
    dash of salt
    1 banana, mashed
    2 T sugar
    1/2 cup 1% milk
    1 egg white

Directions

Combine flour, protein powder, baking powder and salt in a medium sized bowl. In another bowl, combine banana, sugar, milk and egg white, stirring until everything is incorporated. Add wet ingredients to dry. Spoon into 24 prepared mini muffin tins. Bake at 350 for 10-15 minutes or until they test done with a toothpick.

Serving Size: 24 mini or 12 regular muffins
