Nice, healthy brown rice side dish, very cheery on you plate! Nice, healthy brown rice side dish, very cheery on you plate!
Number of Servings: 4


    1 cup cooked brown rice
    1/2 cup each red, orange and yellow bell pepper,
    finely chooped
    1/3 cup chopped onion (any kind works)
    1 cup frozen, well drained spinach OR 2 cups fresh
    1 small clove garlic minced
    1 tsp Tony's creole seasoning OR seasoned salt
    2 TBSPN Balsamic Vinaigrette dressing
    1/8 cup grated Parmesan cheese blend


This dish is very versatile, you can use any rice, or mix two rices, use quinoa too.


Cook rice and set aside. Heat oil in wok or skillet over med heat. Stir in onion and bell peppers and saute 3-4 minutes; add garlic, spinach, and Tony's, saute another 2-3 minutes. Stir in rice and cook until heated through. Remove from heat and stir in vinaigrette dressing and cheese, stir to blend.

Serving Size: makes 4 3/4 cup servings
