Ingredients

1 c onion chopped
4 chicken sausage links (spicier the better!)
3 t minced garlic
2 medium russet potatoes peeled and cut
1 quart low sodium chicken stock
3 cups water
6 cups rinsed and cut kale
Directions
In a stock pot sweat onions. Cut sausage into coins and add. Add garlic, potatoes, chicken stock, and water. Simmer. Cut kale into 1-2 inch sections removing the thick stems as you go. Let kale soak in a water bath then add to pot. Cover and let simmer for up to 3 hours. Once potato has softened, use a potato masher to cream potatoes. This gives the soup a thicker, starchier taste. Serve with a dollup of sour cream and a sprinkle of paprika (not added to nutritional info). Enjoy!
